Traditional Holiday Goodies--2 Kinds of Fudge

After having so much fun with cookies, I nearly forgot about the usually holiday goodies I make...because it is what my mom used to make. :) So on Christmas eve, I set to work.

First up was the Butterscotch Marshmallow Fudge.

We needed to crush the graham crackers first.
The girls had fun whacking the ziplock bags of graham crackers with pots. :)

 Then Abby took a break to test one of the crackers.

In a large pot over medium heat, combine a stick of butter, evaporated milk, and sugar.

It needed to be stirred constantly until the sugar was dissolved but my Mom warned not to let it get too hot.
 Then stir in the bag of butterscotch morsels and crushed graham crackers. Once that is incorporated, stir in the bit of flour.
After removing it from heat, we stirred in the bag of mini marshmallows.
 Then into the waiting casserole dish the butterscotch marshmallow mixture went.
Then that goes into the fridge until it sets. Cut it up and enjoy!

While the Butterscotch Marshmallow Fudge was setting up, I got started on making my Mom's Layered Peppermint Fudge. It really wouldn't be Christmas without this stuff!

Oh, you gotta use a double-boiler for this--ya like mine? It's a little sketchy but it gets the job done. :)

So into the double-boiler goes a bag of semi-sweet chocolate chips and about 2/3 cup sweetened condensed milk. Stir constantly to ensure even melting.


 Then when it gets all smooth and creamy, you can add in a little vanilla extract.
Half of this yummy melted chocolate went into a wax paper-lined square baking dish. The remaining chocolate was set aside. I put the dish in the freezer for 10 minutes to set. Now it was time to melt the white chocolate.


    Now, my mom usually melts the white chocolate in the double boiler, but I didn't want to have to scrape the remaining chocolate out of the pot, clean it, and so on. So I gave the microwave a try to melt the white chocolate. It worked like a charm. :)

    I added in the teaspoon or so of peppermint extract and two drops of green food coloring. It was in the microwave for a total of about one minute.

    I took the dish out from the freezer and spread the green chocolate overtop.

    Then I put it back in the freezer to let it set. Meanwhile, I reheated the chocolate in the double boiler taking care not to heat it too much. It then went over the green chocolate in an even layer. Then into the fridge until it was completely hard so I could cut it up.
    The layered mint fudge was so much of a hit that Nate's uncle took to smuggling some out at the extended family's Christmas get-together. :)

  1. These both look incredible. The mint must have such a pretty presentation. What I REALLY love is that butterscotch fudge. I've never seen anything like that before & it sounds like heaven.

  2. Thank you! It is pretty...bet you could even try red...though it might come out pink. haha I'm glad you like the butterscotch fudge. It's one of my favorite holiday treats. My mom has been making it for as long as I can remember. :)
