It's All Quiche To Me

Spinach & Bacon Quiche
adapted from Recipe.com Magazine


makes 6 servings, Weight Watchers 7 Points Plus per serving
  • 1 unbaked 9-inch pie crust
  • 4 slices of bacon, cut into 1/4-inch pieces
  • 5 large eggs
  • 3/4 cup fat free milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 package (5 oz) frozen chopped spinach, thawed and squeezed dry (1/2 cup)
  • 1 cup shredded Swiss cheese
    

Heat oven to 375 degrees. Place pie crust in a 9-inch pie plate.

In a pan over medium heat, cook up the bacon.


In a medium bowl, whisk together the eggs, milk, salt and pepper.









Spread spinach in the bottom of the pie crust.

Sprinkle the cooked bacon over the layer of spinach.

 Pour the egg mixture over the bacon and spinach; sprinkle with cheese.


Bake at 375 degrees for 15 minutes. Reduce heat to 325 degrees F. Bake 20 minutes more until the filling is puffed and the crust is browned. If it is browning too quickly then cover with foil. Let stand 5 minutes.

Cut and serve. Yumm!!

 


*Side Note: To make it even yummier, you could saute some sliced shallots in the pan with the bacon grease and then add those into the quiche with the bacon.
